In times of grief, taking care of yourself can be challenging.  My collection of recipes is here to offer comfort, support, and practical guidance for cooking for one, creating soothing drinks, and managing your kitchen with ease. Let food be a gentle embrace and comfort.

Cooking for one

Chicken and Broccoli for 1 person

In a bowl:

1 chicken breast cut in bite size cubes, 1/2 sliced onion

1/2 red or yellow pepper cut in bite size. 2 tabls soya sauce

2 tabls olive oil, 1 tsp honey, 1 tabls corn starch

pinch of salt and pepper

Mix well and marinate for 30 minutes

In another large bowl:

1 sliced onion, 1 cup of broccoli, 1/2 cup cut red pepper

1/2 cup cut yellow pepper, 2 tblsp soya sauce

1/2 cup water, 1 tblsp corn starch

salt and pepper to taste.

Mix well.

Combine the marinated chicken  with the veggies in an oiled frying pan - cover and cook for approximately 15 minutes...stir occasionally.

Serve on a bed of cooked rice or with roasted potatoes.

 

Soothing mocktail moments

Sometimes, a comforting drink can offer a moment of peace and reflection.  Here is my favorite... for now:

Virgin Hurricane mocktail:

60 ml passion fruit juice

30 ml orange juice

15 ml Simple Syrup (see recipe below)

30 ml lime juice

15 ml grenadine (purchase at grocery store)

ice

Add all ingredients and stir well.  Add maraschino cherry.

Simple Syrup:

1/2 cup of white sugar

1/2 cup water

Heat until sugar is melted....do not boil ... keep stirring

(only takes a few minutes to dissolve the sugar.)

Store in a mason jar.  Keep in fridge for 1 month.

Smart shopping and meal prep

Grocery shopping and meal preparation for one can be a new challenge.  My tips and strategies might help you navigate the aisles efficiently, and reduce waste.  

I skip large packages now.  I buy fruits and vegetables individually.  Zip lock bags are my biggest friend now.  They are easy to store individual portions for less waste. I am thankful to my family and friends who share their recipes with me.
